RUDY'S has revealed its Stockton Heath opening date.
The award-winning pizzeria has been transforming the former Barclays unit in Church Farm Shopping Precinct in Walton Road.
A spokesman said: "It's with great excitement we can announce we'll be opening your new neighbourhood pizzeria on Monday, May 17.
"You can book a table to join us in the pizzeria from our website or pop us a message on our Instagram.
"We only book 50 per cent of our tables, so that we can always save space for walk-ins. We'll also be on Deliveroo for pizza at home. More info on this to follow soon."
The Neapolitan pizza specialists had previously introduced the restaurant's general manager – Beth Sinclair – and have been recruiting 'pizzaiolis' and front-of-house staff.
Launched in 2015 by couple Jim Morgan and Kate Wilson, the Manchester business was at the forefront of the Ancoats food and drink boom, and quickly gained cult status among pizza fans.
Stockton Heath will be the 'seventh member of the Rudy's famiglia' and the restaurant, which will seat around 50 people, has been described as a 'relaxed neighbourhood pizzeria'.
Believing Neapolitan pizza to be the 'best in the world', Rudy’s dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours, alongside the best quality ingredients imported twice a week from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius, and fior di latte mozzarella.
The dough is made fresh on site every day and cooked in wood fired ovens for just 60 seconds, all in accordance with Neapolitan pizza tradition, leaving it soft and floppy with a 'leopard patterned cornichon' (crust).
