THE speaker for the recent meeting at Lower Withington WI was Judith Townsend of Aston WI.

She was originally from Singapore and moved to the UK to nurse.

Assisted by an Aston WI member, she cooked a three-course meal in a wok.

The delicious starters were prawn crackers, fried spring rolls and little turnovers, followed by main courses of chicken egg fried rice and a vegetable dish with Chinese cabbage accompanied by an already prepared chicken and pineapple curry which was spicy but not too hot.

For dessert Judith made wonderful banana fritters covered in golden syrup.

The spring rolls were brought ready to fry and the chicken was already cooked but she fed more than 30 people with a lovely meal, talking all the time about her life and the cooking process.

It was no mean feat.

Judith is an active member of her WI and runs a luncheon club for pensioners in Nantwich, for which she is getting an award.

She also does a lunch for the RNLI, an organisation which her family supports as they are all sailors, except her.

The evening was highly entertaining and everyone went home full.

The draw for the Buckingham Palace garden party hosted by the Duchess of Cornwall on July 2 was won by Irene Kennerley who also came second in the raffle.

The raffle was won by Sheila Gallimore and the competition by Jillian Robinson.

The next meeting is on April 22 and is members’ night when the committee step down for the evening and members take over.

There will be an entertaining talk on Malaysia and hand-drawn batik from speaker Chandra Law.

The competition is a scarf.
