TWO restaurateurs have decided to return home to transform a Knutsford pub.
Chef David Mooney and former restaurant director Paul Newman have signed a deal which will see them spend £250,000 to refurbish and transform the Red Cow in Canute Place.
Under the pair’s firm – the New Moon Pub Company – the ‘dining pub’ will be renamed the Old Sessions House.
Not to be confused with the court building on Toft Road, the Old Sessions House is the building currently occupied by the Royal Bank of Scotland.
David is co-owner and chef at the Lord Binning in Kelsall and is well known for his 21-year stint at his family’s restaurant, the Belle Epoque on King Street.
Paul was a founder and director at Knutsford restaurant firm Living Ventures, and was responsible for the launch of Gusto in the town.
“Knutsford is a thriving town, where quality is recognised and expected,” he said.
“We’re excited to bring our new brand of dining experience to the area, and we know it will meet the strict criteria for excellence demanded by local diners.”
David has appeared on television numerous times with the Hairy Bikers, as well as hosting his own series on Granada Television, The Food Hunter, and told the Guardian the new restaurant would feature Cheshire produce.
“We are diligent about using premium quality produce and where possible source products locally as there are so many wonderful producers on our doorstep, including Willington Farm Apple Juice and Delamere Goats Cheese,” he said.
The New Moon Pub Company has commissioned its own ale, which is being produced by Tatton Brewery in Longridge. The ale, which has been named ‘The Usuale’, will be on sale exclusively in the Lord Binning and the Old Sessions House.
The venue, scheduled to open at the end of August, will create 20 to 30 jobs including positions for bar, kitchen and waiting staff.
