Dave and Raymond enjoy chat about the old days
A CHEF from Knutsford was reunited with his former mentor when he cooked up a choice of Cheshire produce with Raymond Blanc.
Dave Mooney, co-owner and chef patron at the New Moon Pub Company, which owns The Old Sessions House, was invited to cook at the prestigious Thame Food Festival in the Cotswolds.
There he enjoyed a catch-up with Raymond Blanc, who he was apprentice to at the start of his own career 30 years ago.
“I was cooking with Raymond Blanc, who I used to work for all those years ago,” Dave said.
“He was just amazing and took us back for a tour around his restaurant Le Manoir.
“He wants to meet up again to go out and discuss the old days.
“He said he really misses the old days with all the boys in the kitchen.”
Dave cooked two dishes at the festival, including a starter of liver and bacon with Vimto gravy and mushy peas served on a crouton of bread from Williamsons, in Castle.
His main course was breast of lamb with Hunter’s Gin gravy.
Dave added: “It was great to see how well north west food was received in the middle of the Cotswolds.”
