New Italian restaurant replaces much-loved deli in Knutsford

A NEW Italian restaurant has replaced a well-loved deli in the heart of Knutsford.

Parma Knutsford, part owned by town solicitor Marco Dellapina, has opened up in the unit formerly home to delicatessen Via Via.

Marco told the Guardian ‘it was about time’ for Via Via to be replaced.

“We felt it needed to have something fresh and a new idea,” he said.

“We’ve taken away the deli and replaced it with a tapas and pizza counter and we’ve got a pizza oven as well, so we’re making our own dough.

“The reason we wanted to change the name was that Via Via was associated as being a delicatessen, and we wanted to get the message out that we’re a proper restaurant.”

Marco said a new outside eating area had been completed – and was currently awaiting approval from Cheshire East Council planners.

“We want to promote the whole alfresco dining concept which Cheshire East Council is supposed to be promoting,” he added.

“It has gone really well so far and we’ve just had our best weekend since we opened Via Via five years ago.”

All food on the menu – bar the half-a-metre pizza – is under £10, while coffee is £1 on Monday to Friday between 8am and 1pm.
