Dave Mooney, joint owner of the Old Sessions House in Knutsford
A KNUTSFORD chef showcased his talents to an expectant audience on Tuesday.
Dave Mooney, who is joint owner of The Old Sessions House in Knutsford, was at the Northern Restaurant & Bar show in Manchester.
Dave, who owns the New Moon Pub Company with business partner Paul Newman, did a demonstration using ingredients sourced within 20 miles of Manchester city centre.
Aiding him on stage was New Moon’s executive chef Paul Mercandelli, and as a treat for the audience head bartender Callum Allcock showed off his new cocktail.
David’s demonstration dish and Callum’s cocktail - called the Northern Bar Steward - featured the same core ingredients of Hunter’s Cheshire Gin, apple juice and the drink Manchester gave to the world, Vimto.
The New Moon Pub Company has also announced the venue of its fourth site, located in the Wirral village of Eastham. This pub is presently closed and known as the Stanley.
But it will reopen towards the end of May and be known as The Montgomery. Negotiations are also taking place for New Moon’s fifth and sixth sites.
