Nadine's veggie pizza

Pop star Nadine Coyle shares her simple recipe for healthy, meat-free pizza.

Preparation time: 5 minutes
Cooking time: 5 minutes

2 sliced wholemeal rolls or wholemeal soda bread

1 small tin chopped tomatoes

1 teaspoon dried mixed herbs

4 sliced fresh mushrooms

85g half-fat cheddar cheese (sliced or grated)

1 sliced red or green pepper

1 small sliced red onion

Small pinch of pepperĀ 

Preheat grill to a medium heat. Toast the rolls lightly on both sides.

Spread the tomatoes over the top of the toasted bread. Scatter the remaining ingredients, divided equally between theĀ four portions.

Place under the grill and cook until the cheese is bubbling. Serve immediately with a salad.
